Splendour in the Grass is set to redefine the festival dining experience with a major collaboration with celebrated Australian chef Matt Moran and his iconic Sydney restaurant Chiswick. Chiswick will be lovingly reinterpreted at Splendour in the Grass 2018, positioned in a secret backstage location overlooking a lake. Gather your crew and step into another world for two hours, an unforgettable Splendour experience, drinking all the delicious drinks and eating all the amazing things. Living your best life at your favourite festival.
The 80-seat pop up Chiswick will feature long table seating and serve a special Splendour in the Grass menu curated by Chiswick Head Chef Tom Haynes. Following the restaurant's philosophy, the Chiswick at Splendour in the Grass menu will be seasonal with plates made to share. "This Chiswick winter menu has been created with love for Splendour in the Grass. We've sourced local produce where possible with avocados, macadamias and most of the veggies coming from the Byron Bay area." said Haynes.
The three-course menu will include options such as Cos lettuce, spanner crab and avocado taco; Moran Family lamb shoulder, eggplant & red pepper chutney with flat bread; roasted beer can chicken, baby corn and pine nuts; Splendour-colada, roasted pineapple, coconut and rum, and more - with vegetarian and vegan options available.
Guests will be greeted with a bespoke Chiswick at Splendour in the Grass creation with cucumber infused Smirnoff vodka, elderflower, grapefruit, basil oil and tonic water. A botanic bar will feature curated cocktails that are available to purchase via Visa tap and go cashless technology.
To complement this special festival experience, Volkswagen will provide Chiswick at Splendour in the Grass ticket holders with the opportunity to be collected and driven to the show in style all weekend.
